Welcome to our family table – pull up a chair.


Our goal is simple:


Serve food that tastes good, nourishes the family, and helps the grocery budget stretch farther.

Today, I’m sharing how we use three meats to create six dinners. We prepare meats and vegetables ahead of time to simplify meals and make more time to gather around the table together.

This Week’s Meal Plan

Dinner 1: Stuffed Pepper Casserole

Ground sausage, bell peppers, onions, rice (we often use brown rice and quinoa for extra nutrition), tomato sauce, and seasonings come together in a cozy family meal. I’ve been surprised by just how much my kids love this meal.

Prep Ahead Tip

Chop extra peppers and onions for later meals. Brown extra sausage to use in Zuppa Toscana later in the week.

Stretch-the Budget Tip

Use one package of sausage and combine it with a lower-cost meat such as ground turkey, chicken, or pork.

Prep Ahead Tip

Use that prepped sausage with potatoes, onions, kale, and milk (dairy-free works beautifully too) for a hearty soup.

While cutting potatoes, prep extra for your roast and sheet pan dinner. Store peeled or cut potatoes in a container of water in the refrigerator until needed. I’ve had success storing them this way for up to 5–6 days.

Substitution Ideas

    • Brown rice or quinoa blends

    • Almond or oat milk for dairy-free needs

    • A little butter or dairy-free butter for extra creaminess

Dinner 3: Beef Roast with Potatoes and Green Beans

A simple roast becomes two meals. We like serving it with mashed potatoes and homemade gluten-free bread.

Plan Ahead

Save leftover roast, chopped into small pieces, for nachos later in the week.

Dinner 4: Mexican Beef and Bean Nachos

Use leftover roast with black beans and taco seasoning for a quick second meal.

Budget Tip

Beans help stretch the meat further while adding extra protein and fiber.

Dinner 5: Chicken Alfredo

Chicken, broccoli (with extra prepped for another meal), garlic, and a homemade or store-bought Alfredo sauce paired with gluten-free pasta make an easy comfort meal.

We enjoy Jovial or Simple Truth brown rice pasta because it holds up well. We usually use spaghetti or penne.

Dinner 6: Chicken, Potatoes & Vegetable Sheet Pan Dinner

Use the pre-cut chicken, potatoes, broccoli, and any additional vegetables you enjoy for a simple sheet pan supper. Season with Italian seasoning or a Mrs. Dash-style seasoning blend.

Budget Tip

Fresh vegetables are our favorite, but frozen vegetables work wonderfully too.
